Zacapa rum is aged using a specially constructed wood barrel called the Solera System. This system consists of many different barrels that are stacked up on top of one another. Like layers in an archeological dig, the rum at the bottom of the barrel will be older, while the rum at the top will be younger. The barrels are never emptied, only refilled with rums from older barrels when its time to be bottled.
